How to choose a soda maker
Operation: manual or electric. Many soda makers work without a power supply: you press a button or push a lever and CO2 flows into the bottle. Electric models usually add automatic carbonation levels, which gives more consistent results if several people use the machine.
CO2 cylinder system. Cylinders differ between brands and between connection types (screw-in or quick-connect), so check which cylinder a machine takes before buying. Also consider how you will refill or exchange cylinders, because this is the main running cost of owning a soda maker.
Bottle material. Plastic bottles are light and hard to break. Glass bottles or carafes look better on a table and do not hold flavours, but they are heavier. Check whether bottles are dishwasher safe and whether extra bottles are included or sold separately.
Size and look. A soda maker sits on the worktop permanently, so measure the space under your wall cabinets, because the bottle is lifted in and out from above or the front. Retro-styled or designer models suit open kitchens, while slim, plain machines fit smaller spaces.

How does a soda maker work?
A soda maker dissolves carbon dioxide from a gas cylinder into cold water inside a sealed bottle. You fill the bottle with chilled water, lock it into the machine and carbonate it with a button or lever. The more times you press or the longer the cycle runs, the fizzier the water becomes.
Does a soda maker need electricity?
Not always. Many soda makers are fully manual and need only the CO2 cylinder, while electric models use power for automatic carbonation settings or lighting. Check the product description to see which type you are buying.
How long does a CO2 cylinder last?
It depends on the cylinder size and how fizzy you like your water. A standard cylinder is typically rated for around 60 litres of sparkling water, and stronger carbonation uses the gas faster. Check the stated capacity of the cylinder that suits your machine.
Can I carbonate drinks other than water?
Most soda makers are designed for plain water only, because sugary drinks, juice or milk can foam over and damage the machine. The usual method is to carbonate the water first and then add syrup, cordial or juice afterwards. Some models are made for other liquids, so only do this if the manufacturer says it is safe.
